National Beef’s 73/27 GROUND BEEF, uses trimmings that are from commodity trim, including Shank, 75/25 Deluxe Trimmings, 65/35 Deluxe Trimmings, Finger Trim. Products that are grade and/or breed specific will only contain trimmings from carcasses identified as that specific grade and/or breed and labeled as such. The raw material is ground and blended to the appropriate fat content, then run through a finished grinder with a metal detection step.
