BEEF PETITE TENDER TERES MAJOR

The Beef Chuck –Petite Tender – TM (Teres Major Muscle) is derived from the commodity clod, ¼” clod and case ready clods and is located adjacent to the paddle bone. All subscapularis flap, lifter meat, and any remaining adjacent lean is trimmed. The Teres Major Muscle is trimmed for fat and silver tissue. All cuts are trimmed out, and tag ends and adjacent lean are trimmed.
