The Beef Chuck Short Cut Clod is derived from the cross rib when producing B.I. Neck and .B.I. Neck off chucks. The ear is rounded off and trimmed to approximately 5" in length at it longest point from the seam of the center muscle. Interior fat is trimmed smooth, lean to lean. Surface fat and bevels are trimmed to an average of 1/2".
