BF CHCK CLOD TNDR TERES MUSCLE

The Beef Chuck –Shoulder Tender – TM (Teres Major Muscle) is derived from the Shoulder Clod, and is located adjacent to the paddle bone. All adjacent lean is trimmed. The surface fat is trimmed to the silver tissue, the ends are blocked square to expose approximately 1/2" of lean.
