The Beef Brisket Flat 1/4" is derived from a primal Brisket. The Brisket Flat is the remaining muscle after removal of the point with web meat remaining. Surface fat and bevel is trimmed to average 1/4" thickness; the inside fat is trimmed with flake fat allowed to remain on the piece.
