BEEF PLATE PLD OUTSIDE SKIRT

The Outside Skirt is the thickest portion of the diaphragm, which is located at an angle between the 12th and 6th ribs on the underside of the short plate. Edges are trimmed to expose approximately 75% lean. Bottom is cut square. Exposed lean will be approximately 1/4" thick. The outer skin or membrane is removed from the skirt on the top side (opposite from bone side). Tissue on non-bone side is removed some traces of membrane – clear tissue may be present. Underlying fat and adjacent lean are trimmed with flake fat allowed.
