The Beef Chuck-Semi Bnls is a bone-in blade portion of a Chuck with the neck portion removed at the junction of the 5th and 6th cervical vertebrae. Separation from shoulder is approximately 3 1/2” from the eye, and parallel to the rope meat at the curvature of the neck. The surface fat on all pieces will be trimmed smooth to an average of 1/8” (+/– 1/8”). Humps above the natural back line shall be trimmed.
