BF ROUND-PLD KNUCKLE CR CH

The Case Ready Beef Round Knuckle Peeled 1/8" is derived from a regular Round Knuckle Peeled. It is produced by trimming the outside skin and attached lean tissue, fat, and overlying lean along the natural seam separating them form the knuckle. The inside round muscle is removed. Surface fat is trimmed to an average 1/8" thickness (+/- 1/8"). Tendons and patella pad are trimmed. Patella end of knuckle is squared with a straight line cut parallel with the face of the knuckle at a point approximately 1" from the anterior of the patella pad.
