BEEF ROUND FLAT SILVER OFF 1/8

Block Ready Beef Round Flat is that portion of the gooseneck remaining after the removal of the heel and eye of round. Proper separation of eye and flat must be made along the natural seam. Rump end and tail portion blocked approximately 2" back to expose a minimum of 1" thickness of lean on each end. Flat is trimmed of all inside seam fat with no flake fat allowed. Side strap is removed, silver skin removed on Knuckle side. Outside surface fat and bevels trimmed to average 1/8" in thickness.
