BEEF INSIDE ROUND CAP OFF

The Beef Round-Inside Round Cap off Denuded is derived from a regular Inside Round. The cap, dehydration, all Gracillis membrane, and associated lean is trimmed. The soft side (Sartorius and Pectineus muscles) remains on the inside round. Belly is trimmed with flake fat allowed. The kernel fat and semi-membranous is trimmed. Oyster meat (1/2" thick) is allowed if firmly attached.
