Beef Round Bnls. Shank Off is a boneless, trimmed, one-piece straight across, shank off round. It consists of the inside and gooseneck in one piece and the boneless knuckle. The shank shall be removed along the natural seam between the shank meat and the heel. The aitch bone, shank, femur, tail bones and opaque Gracillis Membrane is removed. Overall surface fat is trimmed to an average 1”. The knuckle is removed along the natural seam on the gooseneck side. The knuckle is cap on with an average of 1” fat overall. Adjacent lean may remain.
