The Chuck (Scotch) Tender is the muscle on the top side of the blade bone opposite the clod that is peeled out along the side of the Paddle Bone and under the Chuck Cover. Product is trimmed to the silver skin with some flake fat allowed. The attached muscle on the nose portion is trimmed leaving a portion of the head muscle on.
