The tail is trimmed off the main clod muscle and the Top Blade Muscle is removed as well; adjacent lean is may remain on Top Blade removal area. The clod is trimmed to 1/4". Inside fat cover is trimmed. The shark fin (web) muscle is completely removed. The Teres Major muscle and adjacent muscle (subscapularis, coracobrachialis, and triceps brachii) will be removed.
