The Short Rib consists of 3 full ribs the 6th, 7th, and 8th ribs, there is no width measurement required as long as lean is exposed on all sides and 3 intercostal ribs are visible. The minimum length is 7" at the 6th rib. Exterior fat is trimmed to the silver skin, flake fat is allowed.
