BEEF OUTSIDE SKIRT STEAK MV

The Beef Outside Skirt Steak MV is derived from a regular Beef Outside Skirt. The edges are trimmed to expose approximately 75% lean. Exposed lean will be approximately 1/4" in thickness. The outer skin or membrane is trimmed from the skirt on the top side (opposite from bone side) with traces allowed. Tissue on non-bone side is trimmed (traces of membrane – clear tissue allowed). Underlying fat and adjacent lean are trimmed with minimal flake fat is allowed.
