The Peeled Inside Skirt is that muscle which lies on the inside of the costal cartilages of the navel. It extends from the brisket end to the rib end of the navel. The skirt shall have both sides peeled and free of fat except for flake fat that cannot be trimmed without removing Lean Tissue allowed. The main body of the Skirt shall be a minimum of 1 1/2" in width and a minimum of 12" in length. Skirts that become torn during trimming, or split due to defect removal may be used as 1 whole piece if there are 2 halves and both halves are a minimum 6" in length. Lean will be exposed on the length of both sides of the Skirt to at approximately 1/8" inch of thickness.
