BF ROUND-SOFT SIDE OFF I/S SEL

The Beef Inside Round 1/4" Soft Side Off is derived from a regular Inside Round. The soft-side (Sartorius Muscle) is removed by trimming through the cap muscle following the natural seam to expose the blue tissue of abductor muscle. The surface fat and bevel is trimmed to an average 1/4". The face of the round is trimmed to remove heavy bone fell from the aitch-bone; seam fat is trimmed smooth.
