BF RND-INSIDE CAP OFF DEV CH/H

The Block Ready Beef Inside Round Cap Off (Deveined) is derived from a regular Inside Round. The gracilis muscle or round cap and side muscle are removed. Remaining fat cover will be trimmed to the silver tissue. All dehydration, gracilis membrane, oyster meat, and cartilage are removed. Seam fat on the lateral side must be totally removed. The tail is removed with a cut parallel to the aitch bone face measured approximately 2” into the body of the inside. This cut should produce a 2” thick tail on the inside round.
