BEEF ROUND INSIDE CAP OFF DEV.

The Beef Round-Inside Round Cap Off (Deveined) is derived from a regular Inside Round. The Gracillis Muscle or Round Cap and Side Muscle are removed. Any remaining fat cover will not exceed 1/8" with a target of 1/16". All dehydration, discoloration including all discoloration associated with thermal pasteurization, Gracillis Membrane, Oyster Meat, and Cartilage are removed. The veins next to the Aitch bone and the vein and fat kernel in the Semi-membranous area are removed. Heavy silver strap present after removal of heel must be removed up to approximately 2" from edge. Seam fat on belly side and vein are trimmed.
