Beef Plate Tiger Tail, also known as tiger tail short rib, is prepared from the end of the short rib rack. Short ribs (ribs 6-8) have been removed by a straight cut along the inside edge of the 9th rib. Upper navel rib section (tiger tail) will consist of the 9-12th rib. The adjacent lean (Blade Meat), rose meat and overlying surface fat remain attached.
