This item is prepared from Item No. 121 after the short plate has been removed. The adjacent lean (Lifter muscle), rose meat, and overlying surface fat remain attached. The short rib is removed by a straight cut along the inside edge of the 9th rib. All bones and intercostal meat are removed. Upper navel rib section will consist of the 9-12th ribs.
