Beef Chuck Trimmings consists of trimmings only from the chuck primal beef cuts. Products that are grade and/or breed specific and will only contain chuck trimmings from carcasses identified as that specific grade and/or breed and labeled as such. The trimmings are derived from steers and heifer carcasses that may be prime, choice, select, and no-roll grades, etc. depending on the specific code requirements. The Lean content of the trimmings with an allowable variation of + or - 2% of the target if product has a labeled lean / fat ratio. Trimmings must be free of bone, cartilage, tendons, backstrap, hair, Ingesta, bruises, blood clots, heavy connective tissue, diaphragm membrane, and any foreign material. Must not contain any offal-type meat (cheek, head meat, heart, liver, sweetbreads, etc.)
