BEEF PLATE INSIDE SKIRT PLD

The Peeled Inside Skirt will have both sides peeled and trimmed practically free of the serous membrane and heavy connective tissue. Fat shall be trimmed except for that which cannot be removed without removing lean tissue. Flake fat is allowed. Lean shall be exposed on both sides of the skirt, including the ends, targeting 1/8” thickness. Ends are blocked. The skirt will have a minimum length of 6”. All tag ends, ragged edges, adjacent lean, cuts and / or hook tears are removed.
