BEEF LOIN TRI TIP PEELED

The Beef Loin Tri-Tip Peeled MV is derived from a regular Loin Tri-Tip. All surface fat is trimmed to the blue tissue; flake fat may remain at an average 1/8" thickness. The fat side is trimmed to expose an average of 90% lean. The seam side is trimmed to expose an average of 75% lean. The edges are trimmed to expose 100% lean the entire length of the Tri-Tip and will be an average 1/4" thick.
